Tuna fish is one of the most popular types of fish beside salmon. With variety of sizes and species, the tuna fish is caught and immediately being frozen on boat with cold temperature. It needed to be conducted so the fish remain fresh. Fortunately, tuna fish is really abundant in stock particularly in Pacific Ocean where you can find different species of tuna such as yellowfin and skipjack which are two top most important tuna fish.
2.      Reception process
The tuna fish which is being caught and frozen on the boat are unloaded from the vessel or truck. After that the tuna is sorted according to their species, sizes, qualities/ conditions, date of caught, date of reception at the factory, etc. Sorted the tuna fish according to their specie is important since like skipjack and yellowfin tuna fish that tend to be mixed because they like to swim together in large school.
3.      Storage process
The sorted tuna fish is put into cold storage with some temperature setting to keep the condition of the fish till they are ready to be used and processed. This is such an important stage to avoid the tuna being rotten.
4.      Thawing process
Just like we already mentioned before, the tuna fish that already frozen in the special storage with a set of temperature need to be thawed first before being used. In the canning tuna manufacturing Indonesia process, before the fish thawed, the manufacturer will selected the fish according to size and specie. Usually the will take the fish based on FIFO system (First in First Out).
5.      Gutting process
The tuna fish is cut in the belly to remove the guts. When the frozen fish being thawed, the manufacturer will carefully clean and remove the guts of the tuna. After that, the fish is cut into sections.
6.      Cooking process
The fish will be put into big steaming machine and being cooked to facilitate the next cleaning stage. This is after the fish itself already cleaned from the guts, but the head and tail still attached. The machine will help the fish to cook quickly. This step is also called as pre-cooking stage in the canning tuna manufacturing process.
7.      Cleaning process
After the fish is steamed inside the steaming machine, they are being cleaned carefully by removing the head, tail, bones, oil, skin, and other residues. The oils, skin, and the bones are not tossed away though; sometime the manufacturer will use these materials to produce other tuna products such as fish meal or animal food stuff.
8.      Canning process
The canning process is the most important stage when the cleaned tuna is cut so it can be put into the can. The tuna meat is placed in can and the liquid is added to cover it. The liquid can be water, brine, oils (olive oil, sunflower oil, soybean oil, etc), and other preservations. After all the canning tuna manufacturing process is done, the fish is heretically sealed.
9.      Sterilization process
The sealed cans are put in sterilization chambers with hot steam to kill all the bacteria that might harm the product. The bacterial can be present in both inside the can or in the foodstuff thus they need to be sterilized properly. When the sterilization process is done, the hot cans need to be washed and cooled with freezing water.
10.  Packaging process
